Banana Bread -- sneaky mom style

I did a little experiment in the kitchen tonight and am now sitting down enjoying it. I am enjoying it so much that I thought I'd share the recipe. It's from the Betty Crocker cookbook, but I've changed it up a bit (maybe a lot:). . . and it still tastes good. You'll wonder when you see the ingredients, but you'll just have to take my word for it.

Mix together:

1 1/4 cups sugar
1/2 cup butter
4 tbsp ground flax
6 tbsp water
2 ripe bananas
1/2 cup pureed sweet potatoes
1/2 cup applesauce
1 cup all purpose flour
1 1/2 cup whole wheat flour
1 tsp baking soda
1 tsp salt

Put it in two grease bread pans and bake at 350 for one hour.

Well, I've got breakfast ready for tomorrow and a casserole in the fridge! Sunday prep is done! Happy Sunday to all and to all a good night!

I am going to try that!!! I don't have bananas, but I have them pureed! Sounds yummy. You are so good about getting things ready the night before. I don't know how you do it! I barely have enough energy to get through the day. 8pm can't come quick enough most nights :)

ok. the bread is in the oven. I took out the sugar and put in honey and maple sugar and took out the baking soda and put in xanthan gum. Oh, the flour was just changed to a gluten free kind.. We shall see :)

Oh, yes, my Sunday dinner prepared is something new I am trying to do. I've only done it twice now and both times it's just been something simple like mac and cheese:)
