Combine: 2 cups sugar
1/2 cup oil
2 eggs
6 cups raw, diced (or shredded) apples
Sift together: 2 cups flour
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon nutmeg
2 teaspoons baking soda
1/4 cup wheat germ (or flaxseed as I sneak in!)
Add to apple mixture. Bake 50-60 minutes at 350 degrees in a 9X13 pan.

I've made something very similar to that. I LOVE the chunks of apple in it. Yummy!!
